Almost time...

About 3 months ago I started my first batch of wine with my conical fermentor. It is now almost time to begin bottling the wine. This batch was made with a mixture of plum and other fruit juices. I am hoping it is at least decent tasting. The system I am using was not cheap but promised to make wine making a much easier process. My previous attempts at making wine had been less than stellar and I in dire need of saving face. It is hard to justify the expense of a hobby that is not cheap and does not result in a drinkable product when it is all said and done. The purchase of this system was on the condition that the ends justify the means. I am anxious to give the wine a try but I know that timing is everything and this batch isn't quite there yet.
